How a restaurant is usually structured

A restaurant splits into front of house (the dining room, led by a front-of-house manager) and back of house (the kitchen, led by the executive or head chef). The general manager or owner sits above both. This template fits a full-service restaurant of around 60 covers.

The kitchen brigade

Kitchens follow a brigade system popularised by Auguste Escoffier: executive chef, sous chef, then station chefs (chefs de partie) and line cooks.

Shift leads

If you run several shifts, add a shift lead card per shift so staff know who is in charge when the managers are off.
